2007 Blend

Viticulture

Vineyard: es (some 90 years old).
Soil Type: It is formed by the decomposition of the granite mass of Falset, mixed with tertiary age limestone deposits.
Vine Age: Older than 60.
Irrigation: Drip Method
Harvest Date: First week of October for Grenache and 2nd and 3rd week of October for Carignan and Grenache.
Yield: 2.5 to 3t/ha.

Vinification:

Vinyes Velles (Old Vines) was fermented using the grape's own yeast.
Blend of 60% Carignan, 30% Grenache and 10% Cabernet Sauvignon.
Fermentation and maceration of the grapes was a relatively slow process and took approximately 26 days to be completed. Malolactic fermentation took place mainly in new French Oak barrels, finally the wine was aged for 17 months.

Tasting Notes:

Color: Deep red ruby with hints of blue showing in its youth.
Nose: Mainly black fruits with spice box, balsamic, bitter chocolate and underbrush.
Palate: At first it is fresh in the mouth then evolves slowly and shows more mature tannins.
Full and rich on the palate, well balanced and long finish, in the palate mainly shows balsamic, chocolate and ripe tannins, with a fresh finish.
Other: Vinyes Velles is an ideal match for any rich sauces but also with spicy dishes, goes well with Indian curries or even a steak.
This wine may be aged until 2015 or even longer.
